Tripe With Salt, Pepper and Vinegar

Some times, when mum was out shopping, she would call into the tripe shop pick up 2lb of honeycomb tripe - There are several different tripe’s but mum

always said that honeycomb was the best. Anyway, she would bring the tripe home, cut it into pieces and we would sprinkle it with salt, pepper and vinegar and eat it cold.

Tripe Is normally blanched or partially cooked when you buy it, so it is quite easy to prepare.

Ingredients

2 lb of honeycomb tripe

Water

Salt, pepper and vinegar

Method

Place tripe in a pan, cover it with water, Bring to the boil,

reduce heat and simmer for twenty minutes

Drain off water, place tripe on a plate to cool.

When cold cut into pieces, sprinkle with salt, pepper and vinegar,

Eat and enjoy.
