Tripe is cheap and nutritious and is usually sold especially prepared or cleaned ready for cooking. There are many types, but honeycomb tripe, so named because it resembles a honeycomb in appearance, is said to be the best. You may love tripe or hate it, but have you tried it? Ingredients
2lb of tripe
4 pints of stock (use a chicken stock cube)
2 onions chopped fine
2 potatoes diced
1oz of butter
1 oz of flour
½ a pint of milk
Parsley, chopped
Salt and pepper
Method
Place the tripe in a saucepan with the stock
Add the onions and potatoes
Bring to the boil and simmer for 1 hour
Blend the butter and flour into a paste
Add to the pan a bit at a time while stirring
Simmer until thickened
Add milk, salt, pepper and heat through before serving
