Tripe Soup

Tripe is cheap and nutritious and is usually sold especially prepared or cleaned ready for cooking. There are many types, but honeycomb tripe, so named because it resembles a honeycomb in appearance, is said to be the best. You may love tripe or hate it, but have you tried it? Whether you have or not why not try the recipe below.

Ingredients

2lb of tripe

4 pints of stock (use a chicken stock cube)

2 onions chopped fine

2 potatoes diced

1oz of butter

1 oz of flour

½ a pint of milk

Parsley, chopped

Salt and pepper

Method

Place the tripe in a saucepan with the stock

Add the onions and potatoes

Bring to the boil and simmer for 1 hour

Blend the butter and flour into a paste

Add to the pan a bit at a time while stirring

Simmer until thickened

Add milk, salt, pepper and heat through before serving

Return to home cooking
