  Tripe in Batter With Onion Sauce

 Tripe when bought is blanched or partially cooked which makes it easy to use in a nutritious and economic meal. Following on from previous recipes here is another tripe recipe that you may enjoy.
 

Tripe

ingredients

2 lb of honeycomb tripe

2 tablespoons of flour

Salt and pepper

Milk

Water

Batter ingredients

8 oz plain flour

1 level teaspoon of salt

2 eggs

1 tablespoon of oil

½ pint of milk

Deep fat or oil for frying

Onion Sauce Ingredients

1lb of onions

1 ½ oz of butter

2 oz of flour

1 pint of milk

Salt and pepper

Method

Place Tripe in a sauce pan

Pour in enough milk and water mixed to cover the tripe

Place lid on pan and cook until tender, 20 minutes or so.

Drain tripe, pat dry and cut into 2 inch squares

Season the flour with salt and pepper

And toss the squares of tripe in it.

For the Batter

Put four and salt in a bowl

Make a well in the centre and drop in your eggs

Add oil and milk gradually beating well

Dip the squares of tripe in the batter

deep fry and drain on kitchen paper

For the Onion Sauce

Peel and chop onions

Melt butter and fry onions until soft but not brown

Stir in flour and cook for 1 minute

Gradually stir in milk, bring to the boil and cook for 2 minutes

Serve tripe with a few small boiled potatoes and the sauce.
