Panhacklety Or Panhaggerty

 

I have heard this dish called by both names however in the Northeast Of England I seem to remember it as being Panhacklety. There again, I might be wrong, I have been before and I suppose I will be again. Never mind, I do remember this simple dish as one that I enjoyed as a lad, so here it is.

Panhacklety

 

Ingredients

 

2lb of potatoes peeled and cut into thin slices

 

1lb of onions sliced

 

½ oz lard

 

3 oz of grated cheese

 

Salt and Pepper

 

Method

 

Melt lard in a heavy frying pan

 

Place a layer of potato in the bottom and season

 

Next place a layer of cheese

 

Then a layer of onion and season

 

Continue with alternate layers until you have used up your ingredients

 

Fry gently to brown then put a lid on the pan and cook until the vegetables are tender
