Carrot and Onion Soup, Wartime Recipe

Wartime rationing and the need to economise produced a raft of hints and tips from the government of the day. Leaflets were produced giving advice on a range of subjects from growing your own vegetables, to keeping pigs and poultry, from cutting up old socks to stuff cushions and pillows, to cooking cheap and nutritious meals and many more. All had their place in the scheme of things but I suspect that the most helpful to the ordinary housewife with a growing family, were the purse stretching, nutritious recipes.

Carrot and Onion Soup

Ingredients

12 oz of carrots

8 oz of onions

1 pint of water

¼ pint of milk

Salt and pepper

Teaspoon of yeast extract, or Marmite

Parsley to taste

Method

Finely chop onions and carrots

Cook them in a pint of water until soft

Stir in seasoning, yeast extract, milk and bring back up to the boil

Stir in parsley and serve.
